Don't give me something delicious and then tell me it's a secret family recipe. Years ago, an acquaintance did that with her pumpkin cream cheese bread, and I took it as a personal challenge.
What I discovered after many late nights in the kitchen was that I still had no clue what her recipe was – but that didn't matter because mine was equally delicious. My pumpkin bread became an autumn staple, but when my family went gluten-free, I was afraid I would never eat it again. Thank goodness for blogger Nicole Hunn .who saved the day by introducing me to an all-purpose gluten-free flour called Better Batter. I also substitute Splenda for sugar, so I enjoy my moist, decadent pumpkin bread with almost no guilt. (Hey, pumpkin is healthy, right?) And the best part: it's not a secret. The Recipe Gluten-Free, Sugar-Free Pumpkin Cream Cheese Bread Bread Ingredients: 2 cups all purpose gluten-free flour (such as Better Batter – bean flours do not work in this recipe) 1 1/2 teaspoons xanthan gum (omit if your flour includes xanthan gum already – Better Batter does) 2 teaspoons baking powder 1/2 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon ground nutmeg 1 teaspoon salt 1 cup pumpkin (fresh or canned) 1 cup Splenda 2 eggs 1/2 cup milk (low-fat or whole) 1/4 cup unsalted butter, softened Cream Cheese Filling Ingredients*: 1/3 cup Splenda 1/3 tsp. corn starch 2 ounces cream cheese, softened 1 1/3 tablespoons unsalted butter, softened 1/8 teaspoon vanilla extract *The filling may be doubled for a super-gooey (and equally delicious) bread. Directions: Preheat oven to 350 degrees.
Grease a 9x5 loaf pan. In a medium bowl, stir together the flour, xanthan gum (if needed), baking powder, baking soda, cinnamon, nutmeg, and salt. In a large bowl, combine pumpkin, Splenda, eggs, and milk. Stir dry ingredients and butter into the pumpkin mixture until well blended. For the filling, mix Splenda and corn starch in a blender. (This is the confectioner's sugar substitute.) With a hand mixer, combine the confectioner's sugar substitute, cream cheese, butter, and vanilla until smooth. Fold the cream cheese mixture into the batter, allowing some streaks to remain. Pour batter into the prepared pan, and bake for 45 minutes or until a toothpick comes out clean. Cool for five minutes in the pan, then remove and continue cooling on a rack. Slice, serve, and enjoy!

Because, in the last few days, I did not felt too well, the reason being increased uric acid. My feet were swollen and they were very painful.
I continued with Ganoderma course, but I went to the doctor. Recommended drugs did not have any help and I understood that they were over. So within a few weeks my legs would be deflated, and I could move normally.
I think if it was winter, I could not wear shoes. I was disappointed. I expect heavy weeks. But an acquaintance, told me to try to drink parsley tea daily or make juice parsley. So I did both. In four days, the legs were deflated and returned to normal. Uric acid decreased. And I who drew parsley on the plate do not eat it. Hahaha, now I like, and I do not miss in my daily menu.

I had always weighed between 130- 135 pounds during my early and late adult life. Things for me changed after I started working for a local bank as a customer representative. My job entailed too much of sitting down while taking care of my clients issues. My weight shifted upward to about 160 pounds. This was very depressing for me because not only did my figure disappear, but my clothes could not fit any longer.
I started looking for ways to cut down on the piles of fats that I had accumulated over a span of ten years. I could skip meals, take hot water but nothing really worked. Early this summer, I was going through online sources to see what is out there which could rescue me. Miraculously, I discovered that I could use green smoothie for my weight loss. Every day I could blend a gallon of green smoothie which composed of collard green, carrots, one ripe banana, a cucumber, tomato and a cup of water. I also drank a lot of water and I still do. I did not like the green smoothie in the first place but after using it for a while, I started loving it. I used the smoothie for two good months coupled with few exercises and cutting down on sugar and junk food and lost 12 pounds.
After the two months I embarked on eating more salad (lettuce, carrots, tomato, avocado and salad dressing) since it was easier to make and the cost was less. As of today, two and a half months down the line, I have lost 20 pounds. My body looks better and I feel great. I feel more energized than I was before I lost the weight. I feel more confident now more than ever. It’s a miracle to me because I had lost hope of ever losing the excessive weight that I had accumulated overtime. I am now more focused on eating healthy and in small potion. The journey for me is not over; I will stop when I lose a total of 25 pounds. Sensible Nutrition vs Complicated
First phase--Nutrition Sense
I happened to catch a Dr. Oz show with the scientific researcher, Gary Taubes and while they both had a lot of good points, even though they mostly disagreed, they missed a few important points that I would like to address. I realize, of course, that I am not a doctor, but I am a retired Respiratory Therapist and a Holistic Nutritionist, so I have backgrounds in both the Medical field, and the Nutrition field, and as much as possible in the past I combined them both. My dissertations for both fields of study were involving either one or the other. As a Respiratory Therapist I could not just do RT without getting to know a lot from the Nurses and the Doctors I worked with. As a Holistic Nutritionist I also was able to teach a lot to my patients, as well as, the Nurses and Doctors I worked with,—at least to those who were open to it.
So, all that said, I have personally waffled between nutritional theories and ideas, and with the ever changing research, and theories to support said research, it is very difficult, at best, to stay perfectly informed or updated on the latest. I used to advocate a vegetarian lifestyle, modified to meet the persons own level of understanding and capability, because I found that hitting them with a drastic change in their eating lifestyle completely threw them and discouraged them, unless, of course, there was a serious illness. Diets come and go as quickly as the popularity of stars and movies and while one may help you lose weight and become healthier, it will not last unless it is sensible and realistic for the persons lifestyle, their personality, and their finances.
Gary Taubes advocates a strict protein diet, including fats and some vegetables. I would love to know his cholesterol readings, but also I would like to see his blood tests for his kidney function. There is a reason they called Gout “the rich man's diesease”!! I know from first hand experience, in my Mother's problems with Gout, that too much protein can overload the already hardworking kidneys. I do not believe eggs cause cholesterol problems or anything else, but all other proteins could be a dangerous overload on all the organs, as well as, the other functions of the body. One thing I feel was rather erroneous was the response from Dr Oz, to having eaten, for just 24 hours, Gary Taubes particular diet. Well, not to mention the fact that he had not eaten like that for we don't know how long, and suddenly he was assaulting his body with all those proteins, no wonder he had adverse reactions! Our bodies usually adapt incredibly well, but making a sudden change, like that, just as with any area of life, will certainly cause a rebellion, of sorts! So, the drama queen act did not suit Dr. Oz. Gary Taubes seemed to be fumbling with his words and was not allowed to speak very much, but the point is, neither one of them was completely right or wrong. Although, admittedly, I would side with Dr. Oz's diet rather than Gary Taubes, because I do not believe we are total carnivores—and I, too, would like to know about Taubes' bowel movements!! I also, do not believe we are total vegetarians, or at least, all of us. That leads to another aspect, I believe was missed.
I believe our ancestry can play a major role in how or what we eat and how it affects us. Those of us who have say, Scandinavian or German ancestry might be more inclined to fish and dairy, while those in the desert or African countries, might have a problem with dairy, and mostly rely on meat they can raise or what vegetables they might grow. Just an observation. Then we have the Blood Type diet, which is a little closer to the ancestry one I have pondered, but we need more research on the latter. I also suspect that weather plays a factor in what we eat and when. From the experience, of having lived in Colorado for about 22 years, I realized as a vegetarian that when winter rolled around for about 6 months, I had begun feeling the need for more substantial food and that many of my vegetarian friends were going through the same rumblings. And that now these same friends are no longer strict vegetarians. We not only had 6 months of cold, snowy winter, but we were also living at 7200 feet, with very little humidity in the air. So, in summer I began eating lighter meals, mostly vegetarian and in winter when I wanted to stoke my stove, I ate a little bit of red meat (organic), once in awhile and chicken, fish or turkey, periodically. It felt good and did not disturb my system.
When I lived in Texas, doing nutritional counseling, I once had a woman client, who was Pentecostal and who was secretly coming to see me for weight loss. Her husband demanded red meat with every meal and all the accoutrement that went with it.
They raised their own beef, which at least made it safer for them, but she was very uncomfortable with eating that much meat and so I counseled her on how she could pare down. It was not easy for her, to say the least, but she was willing to give it a chance. I do not know what the end result was, because like I mentioned she was “secretly” seeking help. Her husband was a farmer so he probably worked off any excess weight, but though she worked hard as well, it was not the type of exercise she needed. All that said, the type of climate, such as East Texas, one lives in almost always demands a certain type of food, but if one is stubborn and refuses to eat what is required for whatever climate, then problems can arise. Also, our ancestry may dictate what climate we settle in, therefore the type of food we may require. Another point I want to address. Years ago we were taught, or shall I say brainwashed, to believe in the information the meat, dairy and poultry industries proffered. Then somebody started doing research and found that there were health problems associated with this diet, so, “they”, whomever “they” might be, decided we needed to alter our diets for optimum health. Now, I have not researched how many “diets” there have been over the years, but suffice it to say there have been and still are, many, and everyone of them purportedly has the research to back them up. On the opposite side of the usual meat and potatoes diet is the vegetarian diet, which sounded good until those same somebodies started doing research and recently have decided the vegetarian diet, which here in the U.S. is high in soy products, causes problems. Also, stating that the Asian's don't really eat as much soy as first thought, and that the problem with soy is that too much can cause hormonal imbalances, when a few years ago it was believed it helped with menopausal symptoms! So, now we have the Soy industry proferring their research and beliefs, but here again, with the advent of the Weston A. Price Foundation, in recent years, we are back to meat and potatoes, but environmentally grown and organic or grass fed!! In the spaces in between we have the high protein diets, the low carb diets and the sugar index diets and the Gluten free diets. Remember the old adage of “Moderation in all things?” Well, after all these years studying and going back and forth on the whole nutrition thing, feeling fraught when asked how I felt about certain diets or what I would recommend, I have finally decided on what I would do, which is moderation—simple moderation. A little meat, fish or chicken, a little soy, lots of veggies, some fruit, whole grains, nuts, etc. I have to qualify this also with paying attention to what our bodies tell us--other than the sugar cravings, of course! Health food nuts, as I have been and many others have been called, are considered fanatics, and granted there are fanatics in every facet of life, but fanaticism in any arena is basically an addiction. As much as I have to admire my grandmother's favorite exercise guru and health food nut, Jack La Lane, and not to disparage him at all, he was a fanatic.

I don´t know if it was because the boy was way too busy at the till or that he was one of these young lads that won´t walk into the kitchen except to get a cool drink out of the fridge, But when my turn arrived at the queue, he lifted my cauliflower, looked at it and asked me "This is a cauliflower, isn´t it?" I nodded.
Then, he pressed on the corresponding key. "Ah, I can tell you don´t cook or shop much, do you?" said I. Cauliflower, however, is a fine and healthy veggie and a versatile one as well. What shall I make with this couliflower I´ve bought? I can boil it up with some potatoes and to dress it with a vinagrette, or I can make it with a besamel sauce and topped with Parmesan grated cheese, but I can also make some fritters of couliflower.
They´re easy to make, They don´t require much cooking and they´re really tasty. There we go, then. FRITTERS OF COULIFLOWER Get a good cauliflower and spare its flourettes to boil them. When they´re boiled, percolate them and leave them aside while you make a batter with egg, a couple of spoonfuls of flour and a tea spoonful of baking powder. Mix it all well. Add one or two cloves of garlic and parsley chopped into the batter. Pour abundant oil in a frying pan and fry each battered flourette when oil is hot. There! The boy wasn´t sure if that precious veggie was a cauliflower and what delicious bites we can make with one.

How I Lost 22.4 Lbs. In 49 Days
My struggle
I have been really fat for about 3-4 years now and I was really having hard time losing weight since giving birth. It is not really about not losing weight that bothers me because I know I lose weight easily if I just put myself into achieving it. The real problem is that I do not feel motivated enough to sustain my zest for trimming down. Most of the time I start with so much energy and excitement but after a week or two, I would go back to binge eating again. Sometimes, I would ask myself, do mothers put so much attention to their children that they are forgetting how to take care of themselves? I for one, a single mother of 3 year old boy myself, seem to have already forgotten to even look at myself in the mirror. With my busy schedule, as a career woman and MBA student, I find it almost impossible to spend a few minutes of exercise everyday, much more to observe my daily food intake. My attitude was that, I am almost working and studying to death so I should compensate it with food.
So I tend to over-indulge. But we must admit that being fit doesn't always have to be intended for the aesthetics only. On my case, I have to be fit also because I have health issues. I'm hypertensive and was also diagnosed with hiatal hernia which causes GERD. So I need to lose weight really bad. The Long Awaited Motivation exercise exercise Good thing our company had this program called the Biggest Loser challenge. It was our company's version of the very popular TV show for losing weight. The mechanics were similar, only, ours had limited duration (run for 49 days only), smaller prizes(15k for 1st prize, 10k for 2nd prize and 5k for 3rd prize), and it was open to all the employees of our company regardless of weight. So even those who were seem fit can still join. And of course, it was only company wide (and not televised). I told myself that time, this is the motivation I have been waiting for. Not only am I looking forward to winning the top prize but also, it thrilled me knowing I would have lots of challengers. Reaping The Rewards of Discipline To cut the story short, obviously, I won. But I did not achieve it all too easily. I broke a lot of sweats, and basically, I disciplined myself with food. And oh boy, it wasn't an easy thing to do. So I want to share with you my secrets for achieving this enormous weight loss. Make no mistake about it, I am no expert when it comes to nutrition, and not even well educated in the field of exercise and body building. But who knows, it worked for me, might also work for some of you. So here it goes: 1. I have never hit any gym nor have I been outdoor to jog during the duration of the challenge. I just used the small space of our house to run back and forth til I literally drop and did my exercise over and over.
2. I ate full breakfast. Coffee, unlimited rice plus any dish (usually meat or vegies) and bread. 3. My lunch would normally be 1/2 cup of rice and any dish. OR one pack of cracker and juice. Fruits at times but they are just bonus. I do this alternately or depends on my mood. No heavy lunch. 4. I make sure when I get home from work to drink lots of liquids then rest for 30 minutes to 1 hour then work out for 30 minutes to 1 hour straight then rest for 30 minutes before shower. After which I go straight to bed with no dinner. The principle I applied with my routine during the duration of the challenge was: Breakfast, eat like a king. Lunch, eat like a queen. Dinner, eat like a slave. It worked wonders for me. I have tried crash diet before and almost killed myself in starvation. I lost more weight but my appearance was like a disaster. They said I look like as if I am into prohibited drugs or something or I looked like I'm just out of a disease because I looked pale and my skin was dry. Contrary to the effects of my latest weight lost were I looked normal, only lighter. I intend to lose 20-30 more pounds. Hopefully, with a little more discipline, I could achieve it before the year ends. Without the prize and the competition, of course, but for my own personal satisfaction.
